Carob, the forgotten fruit of the Mediterranean, is the sole star of this unique spirit. Beyond grapevines, grains and olive trees, carob is a quintessential crop of the Mediterranean. During the warm months of the year, this striking, robust tree stands out for the vibrant green of its leaves, which contrast with the earthy colours of the compact, dry land around it. The carob pods hang from the branches like earrings, ripening throughout the summer to generate valuable sugars for the liqueur.

In the intent to make the most of each ingredient, carob embodies a great challenge and opportunity. For utmost minimalism, we offer a metamorphosis of the carob bean, from a modest, austere pod to an exuberant and evocative liqueur, underscoring the beauty and potential of carob liqueur.

TASTING NOTES

  • This spirit is an expression of Mediterranean warmth, of a blazing ray of sunshine over an orchard dotted with carob trees of fascinating shapes. It is rustic purity, the countryside distilled. The encounter of walking among four beautiful, solitary, productive trees that have adapted to the climate, perched alongside a stone wall, amidst vineyards. Or the discovery in a field of these intensely green trees whose pods hang from the branches, ripening and gradually building in sweetness. Toffee and ripe fruit aromas emerge here to underscore the exuberance of the treasure harboured by this tree.

    This is just as simple as our version of the sour. One of the classics that have been reinterpreted by cocktail cultures around the world, using genuine spirits.

    INGREDIENTS

    5 parts Aiguardent de Garrofa
    2,5 parts lemon juice
    1 part sugar
    1 part egg white

    GARNISH

    Maraschino cherry
    Piece of dried carob pod

    PREPARATION

    Combine all the ingredients in the cocktail shaker full of ice. Shake it with joy and strain it into an elegant Old Fashioned glass full of ice. If foam forms, use a cocktail glass instead.

    Garnish with a maraschino cherry and a piece of dried carob.
