Through the Vins amb Arrels project, we work with admired wine growers, taking delight in bottling beloved landscapes. Just as a painter frames a landscape from the easel, we offer its liquid interpretation in a bottle. Our canvas, a unique wine. The plants are our colours. Our intended style? Bitter wines for appetisers and cocktails. We make alcoholic extracts of each botanical, subtle layers of flavour and aroma that transform the wine, upholding its original essence.
We have captured a piece of the Pyrenees and bottled it for you to take home. First, we made a Sauvignon Blanc-Cabernet Franc coupage, harvested on the southern slopes of the Catalan Pyrenees. Next, we added gentian root, liquorice root, mountain thyme, mountain pine and juniper, along with a tinge of lime, the only non-native botanical.
The harmony and delicacy of this aromatised wine make it just what you want as a refreshing pre-meal tipple. Our research has given this wine its distinctive vinous properties, with subtle hints of juniper and resinous black pine, beckoning a stroll through the forest. It is precisely the sediment of the mountain that persists, alongside the tinges of woody resins, the essential oils of the botanicals and the frankness of an unfiltered wine. It is the memory of a special Friday, after an intense work week, as you look forward to a long weekend or a holiday. Its very mild bitterness and slight sweetness make this the ideal bitters for a Sunday midday aperitif. So, where are the olives?
This aperitif is sure to take you back to the long-table gatherings at your parents’ house with all the relatives, in celebration of the town festival.

PREPARATION
Mix the Vi amb Arrels and soda water in a wine glass or tumbler.

PREPARATION
Pour the Vi amb Arrels directly into the champagne glass. Next, add the sparkling wine.
Arrels is a relaxed, bucolic day of hiking in the Pyrenees, with plenty of time to take in the landscapes and the aromas of the flora around you.

GARNISH
1 orange twist
1 liquorice stick
PREPARATION
Mix the gin and the wine in a cocktail shaker full of ice.
Strain into a wine glass with one ice cube and garnish with an orange twist and the liquorice stick.

GARNISH
1 green olive pierced with a sprig of rock tea. Ideally, a few olives with rock tea.
PREPARATION
Mix the Ginebra Te de Roca and the Vi amb Arrels in a cocktail shaker full of ice.
Strain the mixture into a chilled cocktail glass.
Garnish the cocktail with an orange twist and a plump green olive.
